GUADELOUPE CUISINE
DIVERSITY OF THE CARIBBEAN FOOD
Guadeloupe cuisine has been influenced by the different cultures that have succeeded each other on the island: Amerindian, African, European and Indian. This mixed cuisine is generous, simple but tasty and most often, very spicy!
Some snacks:
* boudin: pork casing stuffed with a mixture of mashed bread, fish or conch or vegetables and a multitude of spices (chili, chives, thyme, logs, etc.)
* accras/codfish fritters : small salty and spicy fish fritters generally with cod, but also with shrimps or vegetables.
* kassav: filled pancake, made of cassava flour, which is cooked on a large hot plate. It is then filled with coconut jam, guava… in its sweet version or with ham and cheese in its savory version
* bokit: kind of big fried and stuffed donut garnished with a choice of fish, cod, meat, ham and cheese
and raw vegetables.
* féroce d’ avocat/avocado balls: mixture of mashed avocado with cassava flour and crumbled codfish, all mixed with hot pepper and onion.
Some traditional dishes:
* dombrés: dumplings made with flour and salt water mixed with « ouassous » crayfish, vegetables or red beans and salted pork tails.
* bébélé: soup with small pieces of green bananas, pigeon peas, sweet potato, breadfruit, pumpkin,and salt meat malanga (a root similar to yam), cabbage… mixed with bacon, pigtails, with beef bowels.
* colombo: Indian influences, colombo is a dish based on curry powder (mixture of curry, black pepper, mustard seeds, thyme, allspice, coriander, etc.) in which we usually cook chicken with carrots, potatoes and rice side (or curry goat).
* matété: the Easter favourite dish this is a crab spicy mixed up with curry and rice.
* court bouillon de poisson/fish court bouillon: fish cooked in a broth made with tomato, onion, chives, parsley and annatto seed oil to color the sauce.
Some desserts
* blancmanger coco: this is a fresh dessert, a kind of flan made with coconut milk, vanilla and lime. It can be eaten as it or accompanied by a fruit coulis
* tourment d'amour: small fondant sponge cake flavored with cinnamon. Its heart is filled with jam usually coconut or guava
* caca boeuf: round cake made with sugar cane and coconut syrup
*doukoun: huge old-fashioned cake that can be marbled, plain, cocoa-based or pineapple.
Some sweets :
* popotte de fruit à pain ou chadèque : these are barley sugars made from pieces of crystallized fruit as breadfruit or a variety of grapefruit
* doucelette/coconut milk fudge : confectionery made from coconut milk and sugar
* kilibibi: candy made with corn flour and sugar cane
* konkada: candy from Benin made from peanuts and browned with burnt sugar cane
Some good drinks
*ti punch: is a highlighed cocktail with sugar cane lime and rum
* chodo: is an irish cream served at weddings or family celebrations.
* shrubb: christmas cocktails made from dried orange peel macerated in rum.
